Aarik Persaud

From his extensive travels around the world, Aarik brings a wealth of international restaurant experience to Heritage. Combining his love of Swiss food and his passion for sourcing seasonal quality ingredients, he has created an elevated menu of traditional Swiss dishes alongside signature plates. From salmon rösti and lobster tart to beef fillet fondue and his impressive wagyu burger, Aarik and his brigade of 15 chefs are continually developing the kitchen’s contemporary offering.

Prior to joining Heritage, he worked as a private hospitality consultant for two years, specialising in kitchen operations in London and Dubai. In 2013, he co-founded Hong Kong based restaurant group, The Butcher’s Club, acting as Corporate Executive Chef for three years, where he oversaw all business operations and a team of 150 staff.

Throughout his impressive career, he has also held stages at some of the most renowned restaurants in the world including Susur in Toronto, Quay Restaurant in Sydney and St. John in London.


Zoran Peric

Zoran is the man behind our cocktail list, an award-winning drinks expert and mixologist who brings his vast experience from working in some of the capital’s most prestigious bars.

Zoran works alongside our bar team on a consultancy basis, creating and developing our innovative cocktail menu which consists of ‘light’ and ‘dark’ blends, influenced by the Alpine landscape of Switzerland.

As well as being a talented mixologist, Zoran is also one of the most experienced ice carvers outside of Japan, having studied the art for over 15 years. You’ll find his creative ice-carved shapes in a number of our cocktails.

Zoran is also the Global Brand Ambassador for Cellar Trends, representing international drinks brands such as the Suntory spirit range including Yamazaki and Hibiki whisky, Patron tequila, and Beluga vodka.


Elena Serban

Elena is Head Sommelier at Heritage and has curated our 200-strong wine list which champions wineries from the Alpine region, featuring top producers from Switzerland, Austria, Italy and Germany, as well as showcasing indigenous varietals and idiosyncratic wines from independent producers. Aged just 31, she brings over 10 years of experience in the hospitality industry and joins Heritage from Hakkasan where she was Senior Sommelier

Alongside her work at Heritage, she is also studying for her WSET Level 4 Diploma and has previously earned her certification as SSI Master of Sake.
